Need to make bread and figure out what to do with the chicken from the stock

Way more planning involved then I would like to make use of all this expensive food that I'm now trying to make and use. Max needs lunch items for school so bread needs to be made. Only one company makes starch free bread and the store is out till Friday. When I made stock I have chicken that needs to be used. I'm thinking chicken salad, but that requires me making mayo. My mayo making in the past didn't go so well. Sigh. Also have a ton of bookkeeping to do and need to check on my out yards.
